Lemon Delicious Biscuits

Soft & Chewy Lemon biscuits with a zingy lemon glaze. These biscuits can be easily substituted for gluten-free using a gluten-free flour.

This morning I was at playgroup with my friends and shared a lovely morning tea with the mothers. It got me thinking of my tried and tested Lemon Biscuits that I like to share with my friends quite often.
I don't know about you but there are times when I crave something with the zingy taste of Lemon. These biscuits always hit the spot. They are so quick and easy to make which is good because they disappear quickly too. I have always made them with gluten-free flour so they are safe for gluten intolerant people like myself. The lemon glaze is a must-add for that crunch on top and that extra lemon tartness. The original recipe I found on Sweetest Menu , a website with a plethora of recipes. So without further ado here are the steps to make delicious Lemon Biscuits, I promise you won't look back.


Lemon Delicious Biscuits
Ingredients
115 grams of unsalted butter, room temperature
200 grams (1 cup) caster sugar
1 teaspoon vanilla extract
1 large egg
245 grams (1 and 3/4 cup) plain flour
1/2 teaspoon baking soda
3 tablespoons fresh lemon juice
fresh zest of one lemon
Lemon Glaze
1 cup of icing sugar
3-4 tablespoons of lemon juice squeezed
Directions
Preheat the oven to 180 degrees C. Line 2 baking trays with baking paper.
In a large mixing bowl add the butter and sugar together. Beat on medium speed until butter and sugar are combined and creamy. Add vanilla and egg and beat until all combined.
Sift the flour and baking soda. Add the lemon juice and zest, beat all together until a soft dough forms.
Roll into balls. Use a tablespoon of dough and roll it into a ball. The mixture should make approximately 16 biscuits.
Bake for 12 minutes or until the biscuits turn golden around the edges. Transfer to a wire rack to cool completely.
To make the glaze sift the icing sugar into a medium mixing bowl. Add the lemon juice one tablespoon at a time, mix together until your desired consistency. You want the glaze to be thin enough to drizzle easily over the biscuits.

I like to keep some of the dough and put it away in the freezer. It is always convenient to have biscuit dough put aside and bake them fresh in the oven when friends pop round for a cuppa. I hope you have a try at making these scrumptious treats. Please let me know how yours turned out.
